halibut, morels, garlic, brown butter

Serves 2

2 halibut filets
EVOO
Kosher salt

Heat the oven to 400˚F. Rub the filets with EVOO and sprinkle liberally with kosher salt. Cook for 5 minutes. Rest for 2.

3.5 oz morels
50g butter
10 big cloves garlic, smooshed, skins still on

Heat a skillet over medium heat. Add the butter. Add the garlic and morels and pan roast until garlic is soft and morels are slightly wilted. To “smoosh” a garlic clove, place it on a cutting board and press down with your palm.
