How to Broil Chicken Thighs

Yield: 2 servings

1 lb boneless, skinless chicken thighs
1 teaspoon kosher salt
4 tablespoons mystery spice mix (I used a mix of smoked Hungarian paprika, garlic powder, and dukkah, but use whatever you have laying around that you think would be tasty!)

Heat the broiler on high for 10 minutes.

Meanwhile, line a sheet pan with heavy duty foil.

Toss the chicken thighs with the salt in a small bowl. Add spice mix and toss again. Arrange on the sheet pan—no overlapping! Broil the chicken thighs on one side for 7 minutes, then flip and broil on the other side for 5.
