Pommes Anna (Potato Pie)

I just got Chris Santos' SHARE cookbook and love it. I love his Beauty & Essex restaurant in NYC, despite the fact that I'm not its target market [black-hat-wearing Instagram girls]. The food is amazing though, and this recipe was inspired by a recipe in his book. Pick it up here: link.

1000 g (2 lbs) russet potato, sliced 1/16-inch-thick with a mandoline or food processor
100 g (6 T) butter
thyme
kosher salt
